For those inevitable times when you’re hungry on the go, it’s energy balls to the rescue! Energy balls are an extremely versatile, nutritious and convenient snack for busy days. They’re packed full of healthy fats, fiber and protein to keep you full. Protein in particular prolongs satiety by reducing levels of the hunger hormone ghrelin. Protein also increases muscle mass and bone health, boosts metabolism and keeps cravings at bay by stabilizing blood sugar. The plant-based energy from the nut butter in energy balls is a good source of healthy fat. Energy balls are gluten-free and vegan. Best of all, they’re easy to make (no baking required). And did I mention versatile? Here are two versions of my energy balls. Depending on your flavor preferences, play around with different nut butters, seeds, natural sweeteners, nuts and dried fruit. All you need is creativity!

Ingredients for Chocolate Chip Energy Balls:

Makes about 12 energy balls

• 1 ½ cups oat flour

• 1 cup walnuts

• 1/3 cup almond butter

• 10 soft Medjool dates (soaked in hot water for 10 minutes if they aren’t soft)

• 1 teaspoon vanilla extract

• ½ cup mini chocolate chips

• water

Directions:

1) Place the oat flour, walnuts, almond butter, dates, vanilla, and water in a food processor. Pulse until the mixture comes together and sticks when pinched. Add more water, 1 teaspoon at a time if the mixture is too crumbly.

2) Transfer the mixture to a bowl and stir in the chocolate chips.

3) Roll the dough into 2-inch balls

4) Enjoy immediately or store in the refrigerator for up to 1 week. Energy balls can also be frozen (for up to 3 months) and left at room temperature to thaw before eating.
