Whether purple or green, cabbage is full of nutrients that are linked to a spectrum of health benefits. Some of these benefits include reduced inflammation, heart health, stronger bones, and improved gut function. Cabbage is also high in fiber, which is shown to reduce the risk for chronic conditions and aid with digestion.
High on beta carotene, fiber (more fiber!), vitamin K1, potassium, and antioxidants, carrots are like the Wonder Woman of the vegetable world. Why Wonder Woman? Um, why not? She’s amazing and so are carrots. In addition to being a “weight-loss-friendly food,” carrots are also often connected with improved eye health.

Yields 4 servings
2-3 cups shredded cabbage (purple or green)
1 cup shredded carrots
1 large cucumber, peeled, de-seeded and diced
1 bunch parsley or cilantro chopped
1 bunch scallions sliced
1/2 cup red radishes sliced thin
1. Place all prepped ingredients in a large bow and mix together.
2. Add into other salad bases or enjoy alone!
3. Alternatively, cover and store in the fridge and use over the next four days.
