Gremolata

Gremolata is a classic Italian condiment that makes grilled and roasted meat brighter and fresher. With abundant fresh herbs, garlic, and lemon, gremolata is a versatile, healthy accompaniment to chicken, salmon, or even roasted potatoes and vegetables. It’s important not to use a food processor — that makes the texture mushy rather than rustic. A batch of gremolata keeps all week in the fridge. Experiment with different herbs like basil, cilantro, or mint.

INGREDIENTS:

  • 2 bunches parsley cleaned and chopped
  • 4 cloves garlic crushed with salt
  • 1 lemon, zested and juiced
  • 1/3 c EVOO
  • Pinch of sea salt and fresh ground black pepper

METHOD:

  1. Crush garlic with a pinch of sea salt using a mortar and pestle. Let sit for 10 min. Add olive oil and allow to sit.
  2. Chop parsley roughly and place in a small mixing bowl.
  3. Add zested and juiced lemon and olive oil and garlic mixture to the parsley. Mix well. Season to taste with sea salt and black pepper.
